Modne burgundere dukker sjelden opp på smakinger, vinkjellere tømmes for vinene før de aller fl este når ti års alder og de aller fl este er med det svært primære i utrykket og vi har fått en hel generasjon vinsamlere som tror burgundere dør når de første sekundæraromaene dukker opp, mystisk nok.
Her er en del burgundere smakt, med årganger tilbake til 1988. At en village Mercurey med tredve år på langs ikke var i live var kanskje ikke helt overraskende, men i fra 1988 viste det seg en rekke sjarmerende viner fra en årgang som ikke gav de aller kraftigste vinene.
2008 er for det meste i det sjarmerende hjørnet for tiden, men noen er fortsatt noe lukket, og andre har lukket seg på nytt. Faser er noe vinkjennere har visst om i lange tider, og er det en vinregion som er notorisk vanskelig å lese faser fra, er det Burgund. Og da særlig de røde.
